What inspired the creation of this Spanish tapas menu?
Benjamin Brial: A tribute to Pierre Loti’s travels across the Iberian Peninsula.

David Reartes: I drew inspiration from the regions of Spain where I’ve lived, blending my memories with culinary traditions.

What are some of the signature tapas on the menu?
Benjamin Brial: Jamón croquetas, patatas bravas, garlic shrimp…

David Reartes: Beyond the classic tapas, we highlight ancestral Spanish techniques—marinades, frying, short cooking, slow simmering—enhancing Mediterranean and Cantabrian coastal products.

 

An Inspiring Collaboration

 

How did your collaboration come about?
Benjamin Brial: A wonderful encounter through a mutual friend. Our Catalan roots connect us—David is from Barcelona, and my family is Franco-Spanish Catalan.

David Reartes: That says it all…

Which dish best represents your culinary signature in this menu?
Benjamin Brial: Smoked sardine with pimentón and tomato. I love its maritime character, elevated by delicate smoking and balanced with lemon and sweet chili.

David Reartes: I have to mention the jamón ibérico croquetas! In Spain, they are a true test—if they are good, you know you’re in an excellent restaurant.

David Reartes: Expect a delightful surprise—authentic Spanish cuisine with a personal touch that transports you.

Which cocktail and dish pairing do you recommend?
Benjamin Brial: Every dish on the menu has been paired with a cocktail, crafted by our head bartender, Fabien Theisgen, and his team. My favorite? The jamón ibérico croquetas with a Sangria 2.0. This modern take on a classic features verdejo, yuzu, cardamom, pineapple, fino sherry, and Mediterranean lemonade—a fresh and balanced pairing that enhances the crispy indulgence of the croquetas.

David Reartes: A cocktail with Andalusian Fino or a Catalan vermouth—an unmissable tradition in Tarragona.

What’s the next culinary destination for the Loti Bar?
Benjamin Brial: The Tsé Fung, to continue the journey to Asia and highlight our Cantonese restaurant. Other stops are coming soon, including Greece… Stay tuned!
